Pulled pork is one of those dishes that I hesitate to make because I always have left overs for days.  I make half the amount and still end up having left overs.  It’s a one and done meal at my house. Despite that fact, I made some for the Steelers game last week.  Now I have to get it all out of my house before tomorrow! 

I took to Pinterest to see if I could find some left over pulled pork recipes and there are actually quite a few.  If you know me, you know I love to top dishes with a fried egg.  So this one peaked my interest.  For pulled pork, I put half a pork loin in a crock pot with some bbq sauce. I don’t make it overly sweet or saturate it in bbq, but leave the bottle out for those who like lots.  I’m not sure heavy bbq sauce covered pork would work well for this, but mine was tasty.  You can sub potatoes for the cauliflower.

Pulled pork is best when it is slow cooked in a crock pot.

Ingredients:

  • 3 big spoonfuls of left over pulled pork
  • 1/2 cup chopped cauliflower 
  • 1/4 cup dice red bell pepper
  • 1/4 cup dice yellow/orange bell pepper
  • 1/4 onion
  • 1/4 cup shredded cheddar
  • 2 eggs
  • 2 tbsp butter
  • 2 tbsp Olive oil

Instructions:

  1. Preheat oven to 400 degrees
  2. Toss cauliflower in oil and roast on a parchment paper lined baking sheet for 10 minutes. 
  3. Heat butter in medium high skillet and throw in the veggies.
  4. Sauté for 5 minutes and add pulled pork. 
  5. Start another pan and make eggs the way you like them.  Fried or poached works best. 
  6. Layer cauliflower, veggie/pork mixture, cheese and eggs.
