Looking for some kitchen gadgets to ask for for Christmas? I gave this one quite the work out that past could of years. Zoodlers are fantastic for turning a heavy meal into a light one. With all of the carbs surrounding Thanksgiving and Christmas, zucchini noodles can lighten up pasta dishes quickly.  I usually make a shrimp alfredo but you can use whatever protein you like.  Chicken works great or even leftover turkey if you still have some from Thanksgiving.  You can add spinach or red bell pepper or mushrooms, too. 

 Also, if zucchini noodles aren’t your thing, this recipe is a great sauce with noodles, just add a little bit more heavy whipping cream. Reason being that this is a thick sauce and the noodles add a little bit of liquid to the sauce whiles it’s cooking that thins it out. 

There is cheese on shrimp.
The prep for this meal doesn’t take as long as one may think.

Alfredo Zoodles

  • 2 zucchini 
  • 8 oz cream cheese
  • 1 tsp diced Garlic 
  • 1/4 cup heavy whipping cream 
  • 1 tps Butter 
  • 1 cup shredded Parmesan cheese
A kitchen machine.
Making the noodles can be easy with the right equipment.

Directions:

  1. Sauté garlic in butter in a medium sauce pan for 2-3 minutes. 
  2. Add heavy cream and stir in cream cheese until melted. 
  3. Use zoodler or mandolin to make noodles from the zucchini. 
  4. Add Parmesan cheese to the sauce and stir in until incorporated. 
  5. Add zoodles to sauce and cook for 3 minutes stirring occasionally. 
  6. Add salt and pepper to taste.
