“Creamed Spinach” does not sound appetizing. Spinach got a bad rep early on in life, but baby spinach helped with a spinach revolution.
What if I called it “Alfredo sauce with spinach.”? You’re in, right?
Good, because that is what I made. I put it under salmon, and it was delicious. I put it under a poached egg for breakfast, and it was super good. I would venture to say it would be delicious under beef or chicken even though I haven’t tried it. My friend on Connect in the Kitchen group on Facebook mentioned this with a white fish, and I was in!
I do what I do with every recipe I find and just use what I have. Try it!
Ingredients:
- 2 handfuls of baby spinach
- 1/2 a diced yellow onion
- 2 cloves minced garlic
- 1 tsp butter
- 1/4 block of cream cheese
- 2 tbsp Heavy whipping cream
- 1/2 cup of shredding Parmesan
Directions:
- Add butter, onion and garlic in pan and cook for 3 minutes.
- Add cream cheese until melted.
- Stir in heavy whipping cream and parm.
- Add salt and pepper to taste
- Serve with fish, chicken, egg or beef of choice!
