My air fryer and I were in a deep, loving relationship when I got it the first few months of the pandemic. I wanted to try every type of meal on every setting.  Like any small appliance, I ended up weighing the “pros” of the type of use to the “cons” of cleaning all elements of it after each use and the counter space it took up.  While I loved what I made with it, down to storage it went. 

Then I wanted to make friend chicken, so we reconnected and so, my lovely Ninja Foodi made a reappearance. And since it’s back on my counter, I make lots of excuses to use it. 

I’m getting new appliances soon and my daughter said she was glad because then we can clean out the fridge.  Let me be clear here, leftovers are something I clean out regularly. I don’t have old casserole dishes from weeks ago in there.  But while I compile are things like condiments. In this case, a few different types of large pickle jars with half of the pickles remaining. So I deduced to cook my was through my full fridge, and use the air fryer.  And so, I made air fried pickles.  I eat mainly low carb, so I made them with coconut flour and pork rinds for the breading. But these can be maid with regulars flour and bread crumbs.

Air fried pickles can be prepared several ways.

Ingredients:

  • 6 Pickle spears 
  • 1/2 cup of coconut flour ( or regular flour)
  • 1 cup of crush pork rinds (or bread crumbs) 
  • 1 egg
  • Seasonings 

Directions:

  1. Preheat air fryer. Mine defaults to 390.
  2. Dry the pickle spears with a paper towel.
  3. Dredge them in flour, then egg, then crumbs. 
  4. For a thicker crust, repeat those steps a second time.  
  5. Place in air fryer and cook for 12 minutes. 
  6. Enjoy with whatever side you like.  I’m a fan of pickles with a Cajun or spicy ranch.
