Brussels Sprouts, Three Ways

I recently started a Facebook Group called Connect in the Kitchen and it has been a wonderful and positive addition to my days.  I’m truly enjoying everyone in the group and their food pictures and stories.  It’s a beautiful supportive groups of folk that love to cook … and eat.   

A bonus was that the group is also how I came into a large amount of brussels sprouts this week!  One of our group members posted brussels sprouts and I was pouting because I didn’t pick any up while I was at Jebbias.  

To the rescue comes my generous friend, Leslie, who owns Ruttenbucks, and they went to a limited menu due to the COVID-19 restrictions. I promised her I would let them go to waste! 

One can use olive oil or bacon grease.

Roasted Brussels Sprouts with Bacon and Balsamic 

Ingredients:

  • 10 Brussels sprouts
  • Olive oil or bacon grease 
  • 1/2 cup of shredded Parmesan cheese 
  • 5 slices of Bacon
  • Balsamic glaze

Directions:

  1. Preheat oven to 400.

2. Cover a cooking sheet with parchment paper.

3. Cut the sprouts in half and drizzle them with olive oil or bacon grease. 

4. Chop bacon and sprinkle over sprouts. 

5. Roast for 20 minutes. 

6. Drizzle with balsamic glaze. 

7. Roasted Brussel Sprouts with creamy garlic dip 

The garlic salt is the key!

Roasted Brussels Sprouts with Creamy Garlic Sauce

Ingredients:

  • 10 Brussels sprouts
  • Olive oil/bacon grease 
  • 1 tsp Garlic salt
  • Half a brick of Cream cheese
  • 3 tbsp of Sour cream
  • 1/2 tsp of Garlic powder 
  • 1/2 cup of Parmesan cheese

Directions:

  1. Preheat oven to 400.

2. Cover a cooking sheet with parchment paper.

3. Cut the sprouts in quarters and drizzle them with olive oil or bacon grease. 

4. Sprinkle with garlic salt and bake for 25 minutes.

5. Combine the rest of the ingredients in a bowl and microwave for 2 minutes, stir and microwave another minute. 

Any kind of cheese can be used with this dish.

Breakfast Brussels Sprouts 

Ingredients

  • 5 Brussels sprouts
  • 1/2 lb Cooked Sausage 
  • 1/2 of an Onion
  • 2 tbsp Butter 
  • 1/2 cup of Feta cheese
  • 2 eggs 

Directions:

  1. Shred the brussel sprouts.

2. Heat butter in the pan on medium high heat. 

3. Add chopped onion and sprouts. 

4. Cook for 5 minutes and add cooked sausage and feta.

5. Cook two eggs either sunny side up or over wash.

6. Layer and enjoy!
