Cauliflower Crust Pizza

I’m a big fan of frozen diced cauliflower. I’ve used it as fried rice and also made it into a risotto. Most recipes you read have you grating a head of cauliflower and squeezing out all of the moisture. Your results will be tasty, but I think that’s a large undertaking for the results, in my opinion.  So I skipped this stepped and tried frozen diced cauliflower when making cauliflower pizza crust. I did a little trial and error with how to prepare it and found that leaving the diced cauliflower frozen is the way to go. 

As with all recipes I post, here are saving tips and alterations. First, I like Birdeye frozen cauliflower the best. Just the original flavor.  I don’t recommend using the flavored ones.  They come with little frozen chunks of flavoring that don’t do well making a crust. Wait until these go one sale for $1.49 and sometimes even $.99 and stock up on a few.  Also, this may go without saying, but when it comes to shredded cheese, generally the bigger bag you buy, the cheaper the it is per portion. This saving rule applies to nearly everything, but sales can debunk the rule.  The per portion/ounce/lb stickers are on the shelves at the grocery store. Do some math. The savings truly adds up.

As for topping for this pizza, do your favorites. Keep in mind this crust isn’t as strong as regular pizza crust. If you add a lot of topping (and I encourage that) you may just be fancy, eating your pizza with a fork. 

I’ve also made these into “cheesy breadsticks” and topped with some garlic salt, mozzarella and cheddar cheese. The kids loved them.

Ingredients:

  • 1 bag of frozen cauliflower
  • 2 cups is shredded mozzarella (or more for topping) 
  • 2 eggs
  • Sauce and toppings of your choice  

Optional:

  • 1/2 tsp of Italian Seasoning and Garlic powder to add to crust 
  • Garlic salt to sprinkle on finished product (this may just be something I love to do, but you can try it!) 
  • Pre-heat oven to 400.

Instructions:

  1. Mix 1 1/2 cups of cheese, frozen diced cauliflower and two eggs. (Add seasoning if you’d like.) 

2. Put parchment paper on a baking sheet and spray with cooking spray.

3. Spread the mixture on the paper and bake for 25 minutes.

4. Take out and let cool for 5 minutes before adding sauce, cheese and toppings. 

5. Return to Oven for 5-7 more minutes until toppings are cooked to your liking. 

6. Let cool for 5-10 minutes. 

7. Eat up!
