Inflation … am I right?

When I first started writing this food column, my focus was to make minimal ingredient meals that were affordable. Coming up with new recipes each week is challenging so I veer from that model occasionally.  

But for this one, I just wanted to go back to those roots. 

I bought a ham a few weeks after Easter on super sale. It had to be cooked within the next week, so I made it this weekend.  I will use the ham to make at least 4-6 different meals.  It’s already been just ham with side dishes as a meal and I also cut some up for an omelet this week.

The dollar basket table in Jebbia’s has missed me a lot recently so I paid it a visit on Monday and picked up a couple of heads of cauliflower.  A brick of cream cheese is $.80 and I bought the blocks of cheddar cheese when they were on sale for $1.25.

That means this meal comes in under $5 for a 4-5 serving casserole. Everything in this recipe I bought on sale by simply paying attention to deals. I encourage you to pay attention to sales, especially on meat. Watch the expiration date and if the date is coming up and you aren’t going to cook it, freeze it. 

As I always say, you can sub-out your protein or your veggie for what you have on hand. 

Cauliflower, ham, and cheese.
The ingredients for this dish are pretty simple.

Ingredients:

  • 1 head of cauliflower chopped 
  • 1/2 pound of ham chopped
  • 4 oz of shredded cheddar cheese
  • 8 oz brick of cream cheese
  • 1/2 yellow onion 
  • 1/3 cup of milk

Directions:

  1. Preheat oven to 400.
  2. On medium-high heat, add cream cheese and milk in a skillet and stir until melted and combined. 
  3. Add in cheddar and stir until melted. 
  4. In a casserole dish, add chopped cauliflower, onion and ham. 
  5. Top with sauce and stir. 
  6. Bake on 400 for 30 minutes. 

Easy and inexpensive!
