Throwing bone-in chicken into a crock pot for the day is a regular occurrence in my house. Not a whole chicken. Just breast or thighs.  

I put them in before work and then come home with an ingredient I can use all week. Chicken fajitas, quesadillas, casserole … the possibilities are vast.  

And despite that, towards the end of the week I always have some of the chicken left, so I put it in a freezer bag and in the freezer it goes.  

I mainly use it for Buffalo chicken dip. Everyone has their own recipe and my favorite is the same one that anyone can find on the back of a Frank’s Red Hot bottle.

However, every once in a while, I’ll stray away from the Buffalo flavor and instead prepare a Chicken Alfredo dip. It’s a showstopper, and I’m not sure why it’s not my go-to.  

The image included with this recipe is the dip served a bread bowl because I put the bread in the oven to thaw for pepperoni rolls and I forgot about it. The dough turned into bread and I knew I had to turn it into a bread bowl for dip.  

I don’t love putting cheese on the top of dips because, when it’s not piping hot, it hardens, and I don’t like that. My advice is to save the cheese topping process for casseroles that you eat with a fork.

Chicken Alfredo Dip

Ingredients:

  • 1 brick of cream cheese
  • 3 tbsp butter
  • 1/2 cup of mozzarella cheese
  • 1/2 cup of Parmesan cheese
  • 3/4 cup of heaving whipping cream
  • 1 cup cooked chicken diced
  • 1 Tsp of garlic salt  

Dip vessel of choice (chips, pretzel chips, bread, crackers)

Instructions:

  1. Preheat oven to 400.
  2. Melt butter in pan and stir in cream cheese and whipping cream.
  3. Once melted and combined, stir in both cheeses. 
  4. Add garlic salt and chicken. 
  5. Put in casserole dish and bake for 20 minutes. 

Options

  • You can get Italian bread or your favorite loaf, hallow it out, and bake the dip in the bread. 
  • If you like tomatoes in your Alfredo, add them on top.
  • If this is too thick, you can thin it with more heavy whipping cream or some chicken broth. 
  • You can blanch some fresh broccoli and use it to dip in the sauce.
