There are obviously foods you miss when going on any type of eating style changes. When I started eating keto friendly, I missed Chinese food.  My dear, sweet (and hysterical) friend Kathy suggested Egg Roll in a Bowl and it quickly became one of my favorite dishes!

You can look up many versions of this recipe on Pinterest, but this is the one I’ve settled on and it’s simple and so good. I haven’t used the bag of coleslaw because cabbage is so cheap and I can control the thickness that way. I find coleslaw a little thin and more wilted than fresh cabbage. But it’s nice to have a quick go-to!

I also use homemade chicken broth. All that means is when I make chicken in the crock pot, I reserve and freeze the broth. Easy and a money saver! 

You can sub in any protein you’d like, just season well. You can also leave out the sugar, but I like the sweet heat of Chinese food.

This dish is in a bowl instead of breading.

Ingredients:

  • 1/2 head of cabbage (or bag of coleslaw)
  • 1 yellow onion
  • 2 cloves of garlic 
  • 1/2 lb of sausage 
  • 1 cup of chicken broth 
  • 1 tsp sugar
  • Sesame oil 
  • Soy sauce
  • Dash of Red pepper

Directions:

1. Heat about 2tbsp of sesame oil in large pan on medium high heat.

2. Add garlic and sliced onion. 

3. Slice cabbage the same thickness as the onion and add to pan.  

4. Add cooked ground sausage.

5. Add broth, sugar, red pepper and soy sauce to taste… I use a lot but start with a tbsp.

6. Cover pan and let cook for 5 minutes. 

7. Remove lid and stir until cabbage is your desired texture.
