Mahi-Mahi

I always over look the fish in my freezer.  When I’m thinking about meals, I tend to lean more towards the ground beef, pork loins or chicken that I have in good quantities frozen. I made it a point to take out the mahi-mahi in my freezer to thaw in the refrigerator while I was at work. 

Once I got home, I remembered that I have only cook mahi-mahi once and I couldn’t remember the recipe I used to season it.  “Hey, Alexa.  What’s a good recipe for mahi-mahi?” The new Echo that I got on super sale gave me a few recipes and I use a modified version of the Maple Cajun Mahi-Mahi. 

Had I planned ahead better, I would have marinated it all day.  But instead,  I brushed the glaze on the fish, cooked it 3 minutes on each side and dinner was done.

Fish is such a quick and easy dish to prepare. I’m going to make the effort to have it more often.

Ingredients:

  1. 4 mahi-mahi fillets
  2. 1 tbsp of Cajun seasoning
  3. 2 tbsp of maple syrup
  4. 1/2 tsp of garlic power
  5. 1 tbsp oil for cooking 

Directions:

  1. Heat oil in skillet on medium high.
  2. Mix all ingredients except the fish.
  3. Either marinate the fish in the marinade for 30 minutes, or brush it on the fish.
  4. Cook fish in skillet. 3 minutes per side.
  5. Enjoy!
