Mashed Cauliflower
WARNING: Do NOT expect mashed potatoes.
While there are some cooking magicians that can make this dish resemble mashed potatoes, I think it’s best that you just go into this knowing your getting cauliflower.
This is a very quick side dish and my recipe isn’t conventional, but in true Jess fashion, it’s little ingredients, easy and good results.
I haven’t tried mashed cauliflower with just butter and salt. I have done loaded mashed, Bleu cheese mashed served with buffalo chicken, and my favorite is garlic Parmesan mashed. I serve those as a side dish, or I put roasted veggies right on top. You can add any flavors you like to this, so play around with it and see what works best for your side dish.
If you don’t have a food processor, I’m sure a good stand mixer, or a lot old fashion mashing would do the trick.
Ingredients:
- 1 bag of frozen cauliflower
- 1/4 cup of heavy whipping cream
- 1/2 tsp Salt
- For garlic parm mashed:
- 1 tbsp of minced garlic
- 1/2 cup of Parmesan cheese
- Chives optional
- For loaded mashed:
- 1 tbsp sour cream
- 1/4 cup of chopped bacon
- 1/4 cup of shredded cheddar cheese
- Chives optional
Directions:
- Cook cauliflower according to instructions.
- Pulse the cauliflower, heavy whipping cream and salt in a food processor until your desired consistency. (If adding garlic, also add that to this step.)
- Stir in the rest of your ingredients.
