I got together with some lovely local community minded ladies this week.  With special events and fundraisers being canceled for so long, maybe we didn’t realize how much we missed spending time gabbing, giggling and having fun with people from so many different backgrounds.   It was refreshing.  With all of that camaraderie and fun MUST come drinks and snacks.  

I can’t say that I know a whole lot when it comes to wine, but when it comes to snacks I would say that I’m pretty well-versed.  I needed something that I could make the night before that I could keep in the refrigerator at work to take to the party afterwards.  

I opted to not do something that needed to be heated.  I had some mini peppers and I remembered that I bought some “everything bagel” seasoning a while ago and I honestly forgot about it. 

I make a very simple dip with cream cheese, blue cheese dressing, bacon, and shredded cheddar cheese. It’s a really good veggie dip for cucumbers and great with mini peppers.  

So, I took that concept and stuffed the peppers with a similar mixture and topped with the seasoning and they were a hit!

Mini Peppers Appetizer Recipe

Ingredients:

  • A dozen or so Mini peppers – all colors 
  • 1 brick cream cheese 
  • 1/2 cup of blue cheese dressing
  • 1/3 cup bacon bits
  • Everything Bagel Seasoning

The snacks can be prepared in any size you would like.

Easy Directions:

  1. Cut the mini peppers lengthwise and take out the stems and seeds. 
  2. Mix together the cream cheese, dressing, and bacon bits. 
  3. Spread the cream cheese mixture on the mini peppers. 
  4. Sprinkle tops with everything bagel seasoning
