I serve on a few boards and committees in the Ohio Valley and I love when they feed us at meetings. Yet in the three years I’ve been with the United Way of the Upper Ohio Valley, I hadn’t cooked for our board or committee volunteers once! That is, until last week.
What is a good 3-4:00 snack?” I asked my co-worker, Maddi. We landed on pinwheels. These are versatile and simple which are two of my favorite things when it comes to cooking.
I would have normally made them with frozen dough but I was running around after work with the kids and didn’t have time to let it thaw and rise. Instead, I grabbed refrigerated pizza crust and it did the trick.
I decided to make half ham & cheese and half pepperoni & cheese.
This made a decent amount, so I was able to give some to our Lace Up for Kids volunteers who helped us hand out shoes to families. All seemed happy and some even went back for seconds.
Maddi trumped me this week by making homemade cinnamon rolls for our board meeting. We have some lucky volunteers! I’m looking forward to getting football season back and making killer tailgate spreads. Monday leftovers are what dreams are made of.
Pinwheels
Ingredients:
- Refrigerated pizza crust(Or frozen dough rolled out)
- Cheddar cheese (or your of choice Cheese)
- Ham sliced thin (or meat &/or veggies of choice)
- Optional: seasoning, Mustard, bbq sauce
Directions:
- Preheat oven to 375.
- Open the package and use a rolling pin to stretch out the dough. It’s thick to start because it’s meant to be pizza crust, so roll it out to about half the size.
- Place a layer meat, completely covering the dough.
- Next, layer the cheese. Either shredded or sliced will work here. (If you are adding any sauce or seasoning, add now.)
- Start at the bottom and roll up tightly all the way to the top and pinch the seam.
- I use kitchen scissors to cut the roll into the pinwheels, about two inches think.
- Place the pinwheels on their side on a parchment paper lined baking sheet.
- Cook on 375 for 15 minutes.
