I have a decent bit of round steak in my freezer.  Well, I have a ton of meat in my freezer currently because I just split a 1/4 cow from downstate West Virginia with some friends.  

I don’t have a shortage of recipes for all of that ground beef, but I haven’t previously cooked with round steak.  I reached out to my buddy James about how he and his wife used this specific cut. Country fried steak was his first suggestion, and then he mentioned gravy. 

I’ve been eating low carb and using coconut flour a good bit.  I thought surely I could use that to make a rue to thicken some beef broth for a brown gravy.  Wrong.  After it didn’t come together I researched and found that the proteins interfere with the thickening process.  The damage was done for me since I used the one can of beef broth I had, so this was more or less a thicker broth and not a gravy.

I really enjoyed the flavor and the texture of the meat cooked in the pressure cooker.  I have a Ninja Foodi and I really love it. It’s super versatile and I use the air fryer setting often. But for this recipe, I used the pressure cooking setting and it cooked the meat as if it were sitting in a crockpot all day long.

Ingredients:

  • 1-2 pounds of round steak cut into 1/4 lb pieces 
  • 1/2 chopped onion
  • 1/2 lb of slices mushrooms
  • 1 cup of flour 
  • 3 tbsp butter
  • 1 can of beef broth
  • Salt
  • pepper

Directions:

  1. Heat 2 tbsp of butter over medium high heat.
  2. Reserve 1 tbsp of flour and put the rest in a dish with salt and pepper. 
  3. Dip each round steak piece with flour mixture. 
  4. Once butter is heated, brown the steak on each side for 1 minute. 
  5. Place meat in the pressure cooker. 
  6. In the pan on the stove, add 1 tbsp of butter, onion and mushrooms. 
  7. Sauté for 3-4 minutes and add 1 tbsp flour and 1 tsp of pepper.  
  8. Once combined, stir in beef broth. 
  9. After 1 minute, pour mixture over the beef in the pressure cooker. 
  10. Cook for 20 minutes and then move lever to release the steam. 
  11. Serve as is or with rice, noodles or cauliflower rice.
