My dad just turned 75! Some background on my father: His mom was born in Sicily and that obviously means that my family knows food! My mom requested that I cook a birthday spread for my dad’s party that was going to be attended by intimidatingly good cooks. I made pepperoni rolls, Hawaiian ham and cheese sliders, barbecue meatballs and queso. Of all of that, my cousins raved about the queso so I thought that would be a great one to share this week!
Who doesn’t love queso? But I’ll be honest … my first versions had lots of heat and I wasn’t sure it would be good for a crowd. I added a brick of cream cheese to cool the temp and the results were evidentially popular!
Here it is:
Ingredients:
- 1/2 lb of hot sausage
- 1/2 lb of regular sausage
- 1 jar of queso
- 1/2 can of rotel
- 1 brick of cream cheese
Directions:
- Brown the sausage over medium high heat.
- Drain the sausage and put back in pan.
- Combine remaining ingredients and storm until combined.
- Serve with tortilla chips!
