Sheet pan recipes are a great staple meal. Most sheet pan recipes have a main dish and one or two sides all on one pan.  Very little prep and easy clean up make them a home run. You can look up lots of different versions of sheet pan recipes, but this is a popular one shared on Connect in the Kitchen. (Thanks to Karen for these pictures and Jana for the recipe!)

I usually make sheet pan meals with chicken, shrimp or kielbasa, and then potatoes and some type of green veggie like fresh green beans, broccoli or asparagus.

You can do any combination of things: pork, beef, fish or you can even do a shrimp “boil” sheet pan meal. This is also a great way to use up veggies. These are really versatile, which is what I love in the kitchen! After doing some research, I’ll be putting sheet pan fajitas on my list to make next week!

Making meals on sheet pan is popular in the Upper Ohio Valley.

Ingredients:

  • 1/4 cup olive oil
  • 2 Tbsp. lemon zest
  • 3 Tbsp. fresh lemon juice
  • 4 cloves garlic, minced
  • 1 Tbsp. Italian seasoning
  • 1 tsp. onion powder
  • 1 tsp. dried thyme
  • 1/2 tsp. paprika
  • 1/4 tsp. crushed red pepper flakes
  • 5 chicken thighs
  • 3 russet potatoes, peeled, halved + diced
  • 1 lemon, thinly sliced
  • Kosher salt and fresh black pepper

Instructions:

  1. Preheat the oven to 425 F.
  2. Line a rimmed baking pan with parchment paper and set aside.
  3. Combine the olive oil, lemon zest, lemon juice, garlic, Italian seasoning, onion powder, thyme, paprika, and red pepper flakes.
  4. Add the chicken, potatoes, and onions to a large bowl.
  5. Pour the lemon spice mixture, season to taste with salt and pepper, and toss thoroughly to combine.
  6. Arrange the chicken and potatoes on prepared baking pan.
  7. Lightly season everything with salt and pepper.
  8. Bake for 40 minutes.
