I treat sweet potatoes as if they are a delicacy. I don’t make them often, but it’s such a treat when I do!  I absolutely love the flavor and have a very hard time cooking with them without adding a little bit of cinnamon.  I went to Charleston, SC for vacation years back and made it my mission to try sweet potato fries everywhere that had them on the menu. I was not disappointed. While they don’t have sweet potatoes a lot on menus locally, I really like the sweet potato fries at  Glassworks and I loved the sweet potato hash at Sarah‘s on Main.

It inspired me to make a version of that at home.  Because I’m a minimalist when it comes to ingredients, this one comes together super quickly. While I’m cooking the sweet potatoes in butter and cinnamon in one pan, I’m frying up sausage in the other.  I normally use regular breakfast sausage, but use what you’d like!

You can use sausage or ground beef.

Ingredients:

  • 1 sweet potato
  • 2 tbsp butter
  • 1 tsp of cinnamon
  • 1/2 lb sausage
  • 2 handfuls of spinach
  • 2 eggs

Directions:

  1. Sauté diced sweet potato in butter with cinnamon for 10 minutes.
  2. Brown sausage in a separate pan. 
  3. Add sausage to sweet potato mixture and toss in spinach until wilted.
  4. Fry two eggs to your liking.
  5. Plate the sausage/sweet potato mixture, and top with fried eggs.
