Bite Me Bakery is located in Centre Market across from the Center Wheeling Parking Garage along Market Street.
The owner, Courtney (Mizwa) King, is a native of the Buffalo, N.Y., area, but she moved to Wheeling with her husband about three years ago. Bite Me has been open for about three months now.
“My favorite part so far in starting the bakery was seeing my vision really come to life,” King explained. “I am very much a ‘do-it-yourself’ person, so seeing my vision I had on paper come to life and evolve has been amazing.”
The bakery has a variety of desserts to choose from such as French macarons, mini loaves, fresh donuts (classic or filled), brownies, blondies, vegan chocolate chip blondies, cookies, cookie sandwiches, and six-inch cakes.
“My favorite dessert to make is the French macaron. This is something that I taught myself through trial and error,” King explained. “They are a labor of love, but they are completely worth the time and effort. The almond flour meringue cookies are both beautiful and delicious.
“I think that is why they are my favorite,” she said. “It is a cookie that not many people can make because it takes passion, patience, and persistence in order for them to turn out correctly.”
While King is asked about the sweet treats the pastry shop offers, it’s the bakery’s name that makes most curious.
“Where I got the name Bite Me Bakery,” she said. “I get asked how I came up with the name pretty regularly. I pride myself on being unapologetic. I learned from an early age, that you cannot please everyone, nor can you let people hold you back.
“So, when someone or something gets in your way, all you have to say is ‘bite me’ and move forward,” King explained. “Along with that slogan, I have been told over the years that not only are our desserts delicious, but they are also so beautiful that you can’t help but want to take a bite out of it.”
Since the bakery is fairly new to Wheeling, not a lot of residents in the area are aware of the location and the hours of operation. They are open on Monday, Tuesday, Friday, and Saturday from 6 a.m. until 3 p.m. and they also are open on Sundays from 8 a.m. until 1 p.m.
