Greek Cucumber Salad

With or without summer picnics this year, “salads” are an easy go-to side dish.  While there is usually some cooking involved, boiling eggs, pasta or potatoes, this one is completely cook-free.  This Greek cucumber salad combines some of my favorite flavors and ingredients. 

I served it on my plate next to grilled chicken and absolutely scooped both up on the same fork.  

As always, feel free to omit or add ingredients, and hard boiled eggs would be great in this. I have also used a Greek salad dressing when I didn’t have lemon on hand for this dressing.

The ingredients can be changed up, and hard boiled egg is a great addition.

Ingredients:

  • 2 cucumbers chopped
  • 2 tomatoes of your choice chopped
  • 1/2 of a red onion chopped 
  • 1/4 cup olive oil
  • 1 1/2 Tablespoons lemon juice
  • 2 teaspoons dried oregano
  • 1/2 of minced garlic 
  • 1/2 cup crumbled feta cheese
  • 1/2 cup kalamata olives 
  • Salt and Pepper to taste 

Directions:

  1. Mix olive oil, lemon juice, garlic and oregano. 
  2. Combine all other ingredients in a large bowl.
  3. Pour dressing over veggies and stir. 
  4. Refrigerate until ready to serve.
