While I don’t order Chinese food often, I do crave it now and then. It was a major food group in my life in my 20s. Fun fact, I didn’t even try Chinese food until I was out of college. It blows my mind how reserved my diet was until I hit my mid-20s and started being open-minded to trying new things.
To be fair, I didn’t know many people in my teenage or college years that could cook more than Ramen noodles or Kraft Mac n’ Cheese. I didn’t even really start cooking until I had a home of my own and was starting a family. Now I cook a lot of things… and my kids don’t eat most of it either. Ha!
Stir fry is an easy at-home way to whip up a meal that probably takes less time than ordering the take-out. This is my first time using plain ground pork in stir fry. I usually use chicken for stir fry and sausage when I make an egg roll bowl.
I ran across a similar recipe that used different spices and sauces, but this is what I had on hand and the flavor turned out great. I like a little heat and a little sweet in my stir fry. As always, add more or less to your liking, but this is a good base. You can also serve this over rice or noodles.
Ingredients:
- 1 lb ground pork
- 2 small zucchini
- 1 medium yellow squash
- 2 cups of sliced mushrooms
- 1/2 onion
- 1 tsp minced garlic
- 1 tbsp of chili garlic sauce
- 1 tsp ground ginger
- 1 tsp of sugar
- 2 tbsp of soy sauce
- 2 tbsp sesame oil
- 2 tbsp vegetable oil
- Salt and pepper
Directions:
1.Heat vegetable oil over medium heat and add pork.
2. Add salt and pepper and brown the ground pork.
3. While that’s cooking, slice up the onion, zucchini, squash and mushrooms.
4. Once the pork is browned, put pork in a bowl to the side and return the pan to the heat.
5. Heat up the sesame oil and garlic and throw in the rest of the sliced veggies.
6. Leave them in the pan for 1 minute to cook and then add the remaining ingredients to make the sauce over the veggies.
7. Stir fry the veggies for 2 minutes and then add the pork back into the pan.
8. Stir over heat for another 2 minutes.
You can serve over noodles or rice, or this dish is great as is.
