When in doubt … omelet. 

I have had a hectic week, guys. I have been chasing my children around every evening from sport to sport for the entire week(for months actually).  Plus my aunt and uncle are in from Texas and I had the opportunity see them a couple of times … and I took it.  Therefore, the one time that I was home during the evening was late after a 6 o’clock basketball game at Our Lady of peace, and I made an omelet.  

I’m not sure how you plan a meal, but I’ll look at my fridge and see what I have, and then I’ll make a meal.  

Sausage, peppers, mushrooms and cheese spoke to me.  I layered them on the foundation of a scrambled egg and I wasn’t at all disappointed.  In fact, it punched so much flavor, that I think I prefer omelets in the dinner capacity.  

So here it is in all of its glory: The omelet that I would eat a minimum of three times a week.

Ingredients:

  • 3 eggs
  • 1/4 lb Sausage 
  • 1 diced bell pepper
  • 1/4 diced onion
  • 3 diced mushrooms
  • 1/4 cup of cheese

An omelet can be seasoned in a number of different ways.

Recipe:

  1. Cooked the sausage until no longer pink. 
  2. Add all ingredients (except eggs) and cook to tender-crisp. 
  3. Beat eggs and put them on a nonstick pan (or pan with Pan spray).
  4. Once the outside of the egg are dry, flip with a large spatula.
  5. Add cheese and then layer sautéed veggies and meat. 
  6. Top with hot sauce, salsa&sour cream or whatever you would like!
